Busy with cleaning the house the whole day, I suddenly heard a car parked outside our house on a typical humid Saturday afternoon. I had to make a quick look at the window to see who might have thought to dropping by without letting me know. However, I was delighted when I saw my sister tagging along two of my nieces with her. She said she needed to make some last minute shopping and that she had to leave the kids behind. I was extremely happy to have them around. They’re my best friends in the world.

Grilled cheese has been a popular lunch choice for generations, and the variations on this simple sandwich abound, depending on where you are in the world. Mesophilic Culture
What is a mesophilic cheese culture?
Mesophilic culture is used in the making of cheese and is designed for making cheeses that get cooked at intermediate temperatures. Typically, they cannot withstand temperatures that exceed 102° F or 30° C and should only be used where the curds should not be heated above that temperature. Along with thermophilic cheese cultures, the mesophilic culture is one of the two primary and most commonly used cultures.

There are few cheeses creamier and more elegant than goat cheese. Not only does goat cheese have a rich, tangy flavor, it is also extremely healthy. It is very low in fat and cholesterol compared to other types of cheeses like cheddar and cream cheese.

The art of making goat cheese ranges from a quick and simple process, to a long and complicated procedure. The soft spreadable form of goat cheese known as chevre is probably the best known of the soft cheeses; however, many other forms of soft cheeses can also be easily made with goat milk.
The large quantities of three fatty acids, known as capric, caproic and caprylic acid, are responsible for the unique aroma and tangy taste of cheese made from goat milk. Cheeses made from the milk of other animals can not duplicate the taste of goat cheese, because the other milks do not have the abundance of these three medium-chain fatty acids.

Ask any group of people what their favorite comfort foods are and most likely cheese is involved. What if you could make you own cheese at home anytime you wanted, and it would be ready that same day! That’s what I did. I have always been into projects. For a long time I have made my own wine.(But that’s another story) I also like to cook. One day while looking up recipes on the net I found a site called www.How-To-Make-Homemade-Cheese.blogspot.com My curiosity was peaked. I could make my own brand of cheese to cook with or serve with my own wine! AWSOME!

Making cheese at home is not exactly an activity you could just kill some time with. It requires constant discovery, trial, and error, some degree of expertise, and loads of patience. In its most basic form, cheese is made by removing the water content in dairy milk. Soft cheese contains more water, while hard cheese is drier. Thus, cream cheese would have a higher water content than, say, cheddar cheese.
